Hey all...I thought some of you might like this recipe. There is a good series on training running in the NYT. This past week it was biking, with previous articles on swimming, running and rowing. This week, there was a simple recipe for rice bars. These are going to take the place of those $1.50 nutrition bars. They are cheap and easy to make. The recipe is simple with not many ingredients or measurements.
Rice...I made 2 dry cups of rice, not sure how much it made cooked. I had Jasmine on hand, but the recipe called for sushi rice. Now I know why...it is much stickier. The Jasmine was fine, but I think sushi rice will stick together better.
Cook the rice and let it cool a bit.
Mix in a 3 or 4 big scoops of peanut butter and another 2 or three big scoops of Nutella. Just keep mixing in until it is all mixed in, no white rice showing.
Line a cookie sheet with wax paper. Spread the mix on the pan. I made mine about 1/2 to 3/4 inch thick. It covered the whole pan.
Now, let it cool in the fridge for an hour or so. Cut into bars or squares. I made mine into bars to fit into snack size zip lock baggies. ( They were a little loose, but I was able to scoop them up in bars and get in the bag. (sushi rice may help them stick!)
I think it made about 18-20. I put them all in baggies and put them in a plastic container in the freezer.
This morning I pulled one out and popped it in my pocket. By mid ride it was thawed out and ready to eat! Next time I may mix in some protien power and other good stuff! They are healthy and a lot cheaper than the store bought bars!
